we often make ebelskivers on sunday mornings. they have taken a little practice to master but they are really yummy (even when they don’t look so pretty!) if you aren’t familiar, ebelskivers are a danish puffy filled pancake. you can fill them with whatever you want - sweet or savory. when we make them for breakfast, i usually opt for mascarpone cheese and raspberry preserves. today was the bird’s first ebelskiver experience. she thought they were pretty tasty too!
